Avocados are one of my favorite foods, and I love that they’re one of the healthiest foods you can eat, as well!
Avocados are full of healthy fats and fatty acids, fiber, and lots of vitamins and minerals. Some people are afraid of avocados because of the fat content, but I’m passionate about dispelling the myth that all fat is bad – it’s not! The healthy fats in avocados (and foods like coconut oil and olive oil) are actually essential for your body to be able to absorb and use the vitamins and nutrients in other foods. Seriously.
How to Get A Perfectly Ripe Avocado
Getting an avocado to be perfectly ripe for when you want to eat it can be tough. I usually let my avocados sit out on the counter until they get slightly soft, then put them in the fridge. Usually they can last in the fridge for at least a few days before they start to go brown and mushy inside.
I haven’t tried this yet myself, but I’ve also read that you can put an avocado in a paper bag with an apple or banana for it to ripen more quickly. Let me know if you’ve tried this or have any other hacks!
One of the best things about guacamole is that you can use overripe avocados in it, and it will still taste really good.

The Quickest Simple Guacamole Recipe
Most guacamole recipes are pretty simple to make, but not quick to make. Chopping the onion, tomatoes, garlic, cilantro, etc. can take a lot of time, and I’m not always up for spending 15 minutes to make something I know we’ll eat in 5.

I’ve been making variations of this super simple guacamole recipe for a couple of years, but I finally decided to nail it down and publish it!
The great thing about this recipe is that it requires absolutely no chopping. Yeah, it doesn’t have the fresh produce that we all love in guac, but it still has a ton of flavor for when you want to make it quickly.
Believe me, I’ve had friends and family gush over how yummy this guacamole is…
Plus, guacamole is gluten-free and grain-free, dairy-free, vegan, paleo, and Whole30.
So here’s all you need to do.
1. Peel and pit your avocados, then put them in a bowl.
2. Add all the apple cider vinegar, lemon juice, or lime juice to the bowl with the spices – cumin, dried cilantro, garlic powder, cayenne pepper, pink Himalayan salt and pepper.
I love lime juice the most, but sometimes I go for apple cider vinegar when I don’t have a fresh lime on hand. You can play with the spices according to what you like. I honestly usually add even more spices than I list in this recipe (like turmeric, because I add turmeric to everything I can since it’s so amazing for health), but I just throw them in without measuring.
3. Using a fork, mash the avocados and mix them up with the spices.
4. Eat it! I like dipping plantain chips in it, but guacamole’s great for with corn chips (if you’re not paleo), on tacos, on sweet potatoes, and lots of other yummy things.
You can buy paleo plantain chips (made with just plantains, palm oil, and salt) on Amazon if you can’t find them in your grocery store. There’s sadly not a Trader Joe’s in my town, but I stock up on them at Trader Joe’s whenever I make it to one!
This simple guacamole recipe requires no chopping, and it's the quickest guacamole recipe you can find, but it's full of flavor and is absolutely delicious!
- 3 avocados
- 2 tsp apple cider vinegar, lime juice, or lemon juice
- 2 tsp dried cilantro
- 1/4 tsp garlic powder
- dash cumin
- dash cayenne pepper
- freshly ground pink Himalayan salt and black pepper, to taste
Peel and pit the avocados, and put them in a bowl.
Add the apple cider vinegar, lime juice, or lemon juice, and spices to the bowl with the avocados.
Use a fork to mash and mix the avocados and other ingredients. Enjoy!
I like guacamole most with lots of lime juice, but I use apple cider vinegar when I'm in a hurry or don't have fresh lime on hand, and it's still super yummy!
You can sub in 2 cloves of fresh garlic for the garlic powder if you want, sub fresh cilantro for the dried, and add in a fresh tomato and onion if you don't need it to be as quick and simple.
