I have one more ingredient recommendation, and that’s for coconut oil. If you don’t like the taste of coconut, don’t worry. Buy refined coconut oil – the coconut taste has been extracted.

I personally love the taste of coconut, and so I buy giant tubs of virgin coconut oil. Nutiva is an excellent brand that makes organic, sustainably-sourced coconut oil:

For the bananas, the browner the better when it comes to baking! As bananas become more ripe, they become more sweet.

I personally like to let a bunch of bananas get really brown, then throw them in the freezer. That way I have them on hand when I need them for baking or smoothies.

If you have frozen bananas, just let them sit out and thaw or give them a quick zap in the microwave so that you can mash them and mix them into your baking.

Ingredients
  • 1/4 cup almond flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp pink Himalayan salt
  • 2 very ripe bananas, mashed (about 1 cup)
  • 3 eggs, whisked
  • 1/4 cup coconut oil, melted
  • 1/3 cup dairy-free chocolate chips
Instructions
  1. Preheat oven to 375 degrees F.

  2. Add all ingredients to a large bowl and mix well.

  3. Pour batter into a greased muffin pan or into muffin liners (it should make 10-12 muffins).

  4. Bake for 20 minutes, then enjoy!

My kids would love these (and so would I) I’m also struggling for a healthier me, I’ve even start running with SportMe marathon training app and I can say I’m on the right track now. Nutrition is an important part of my losing weight plan, and your blog posts are a true inspiration!
