Finding clean eating dinner recipes that my whole family and I love is a challenge!
With my desire to eat cleanly and differing food preferences among the rest of us, there are lots of opinions about what we should eat and how we it should be made. I’m always on the lookout for clean eating dinner recipes that everyone will love.
Ryan and I are living at my parents’ house right now. He has an “apartment” in the basement, and I live on the main floor with my parents, but we all share meals and living spaces. I moved out when I was 17 and never thought I’d move back in, but life circumstances have led us here – and surprisingly, we are enjoying it!
We live in a small, rural town (on a farm, my dad is a farmer!), and there’s not a lot to do out here, so one of the things I enjoy most that adds some variety to our lives is trying new recipes.
My parents aren’t used to my style of cooking, but I’ve really enjoyed the challenge of cooking up things they’ll love too.
Here are five clean eating dinner recipes we’ve made recently that the whole family has loved and asked me to make again!
Salmon with Tomato Sauce and Capers

Salmon is a rare treat for me because of the price tag. Prior to making this recipe I’d never prepared salmon myself and I admit, I was nervous I’d mess it up! Thank goodness this deliciously flavorful salmon dish was easy to make and easier to devour.
(I subbed a gluten-free flour blend for the whole-wheat suggestion.)
Chicken and Mushroom Skillet in a Creamy Asiago and Mustard Sauce

This recipe is on repeat since I love mushrooms and mustard! Plus, it’s super easy to make.
I like to sub coconut cream for the heavy whipping cream, and rather than buying two kinds of mustard I just use my favorite and double it. This recipe can easily be made paleo by using coconut cream, substituting chicken broth for white wine, and removing the cheese. I eat this dish with broccoli (as pictured) and make rice or quinoa for everyone else.
The Best Cauliflower Pizza Crust

This grain-free pizza crust was so good, I didn’t miss the flour at all!
A bit labor-intensive, I’d speed up this recipe by buying cauliflower that is already chopped or, even better, riced (which I plan to do next time). I used a large head of cauliflower and it made two small pizzas.
I made the crust semi-thick and it was not crispy (I prefer doughy, thick crust), but I assume if you press it out thinner it will get crispier and be easier to pick up. Topped with pizza sauce, cheese, fresh tomatoes, spinach, mushrooms, and ground beef, it was a hit with everyone!
Indian Chicken Coconut Korma

This is one of my favorite foods I’ve ever made, no joke!
Be sure to give yourself at least 4 hours to soak the cashews and coconut (I almost forgot to), and double the recipe because, believe me, you’re going to want to have leftovers! Basically a one-pot meal, this dish is straight-forward and delicious.

This is one of those recipes you’re going to have a hard time believing is healthy! Rich, creamy, and flavorful with a little kick of spiciness, it’s another one-pot meal that’s super easy to make. It’s also Whole30 compliant.
