Paleo Double Chocolate Chip Coconut Cookies

These paleo double chocolate chip cookies with coconut are soft and chewy, and absolutely delicious!

Chocolate and coconut are two of my very favorite things, so I was excited to develop a recipe for paleo double chocolate chip cookies made with coconut – and they turned out incredibly. I’m not exaggerating when I say these are my new favorite cookies!

I shared these cookies with family members who are not used to eating paleo baked goods (grain-free, dairy-free, and refined sugar-free), and they didn’t stop raving about how amazing they are for at least 10 minutes. These cookies are soft and just a little bit chewy. Especially when they’re still warm, the melty chocolate and coconut combination is absolutely perfect.

Ingredients:

These paleo double chocolate chip cookies with coconut are made with almond flour, and are only sweetened with honey. They’re gluten-free, grain-free, dairy-free, and refined sugar-free. But you won’t miss any of those things, I promise!

If you’re strictly paleo, make sure your chocolate chips are dairy-free. The Enjoy Life brand below has amazing dairy-free chocolate chips. I used a very finely shredded coconut in my cookies, but you can use regularly shredded unsweetened coconut, as well.

Instructions:

These paleo double chocolate chip cookies with coconut are extremely easy to make! All you have to do is mix together the dry ingredients, mix the wet ingredients separately, then combine them. You then chill the dough for 20 minutes in the fridge, and then you’re ready to form it into balls and bake them for 10-12 minutes.

I baked these for 10 minutes, and they were still just a little bit gooey – exactly how I like them!

Update 8/30/18: I updated the recipe to include 1/4 tsp of pink Himalayan salt instead of 1/2 tsp because a couple of my batches tasted a bit too salty.

Ingredients
Dry:
  • 1 cup almond flour
  • 1/3 cup cocoa powder
  • 1/3 cup unsweetened shredded coconut
  • 1 tsp baking soda
  • 1/4 tsp pink Himalayan salt
Wet:
  • 1/4 cup raw honey
  • 1/4 cup coconut oil melted
  • 1 tsp vanilla extract
  • 1 egg room temperature
  • 1/2 cup dark chocolate chips, dairy-free if paleo
Instructions
  1. In a large bowl, whisk together all the dry ingredients (except the chocolate chips): almond flour, cocoa powder, shredded coconut, baking soda, and pink salt.

  2. In a small bowl, whisk together all the wet ingredients: honey, melted coconut oil, vanilla extract, and egg. Once combined, add the wet ingredients to the dry, and whisk them together.

  3. Stir in the chocolate chips, cover the bowl with a towel, and refrigerate the dough for 20 minutes.

  4. Preheat the oven to 350°F, and put a sheet of parchment paper on two cookie sheets, or lightly spray them with coconut oil. When the dough is done chilling, form it into small balls and space them out about two inches from each other on the cookie sheet. The dough is sticky, but don't worry, the cookies will turn out great!

  5. Bake the cookies for 10-12 minutes. Let the cookies set on the sheet to cool for 10 minutes before transferring them to a rack to cool completely. Enjoy!

Recipe Notes

I used a very finely shredded unsweetened coconut from Trader Joe's. If you use regular shredded coconut the texture and appearance of your cookies might be slightly different from mine, but they will still be just as delicious!

I dont know what i did wrong but they came out salty and dry. Crumbles apart. I threw them out. I followed the instructions…used coconut flour instead of almond???
They stayed in balls and never flattened when they baked.

Hi Dawn, I’m so sorry to hear that! Your substitution would’ve been the issue, unfortunately… coconut flour is very different from almond and they can’t be substituted for one another 1 to 1. I’ll link to an article that might help you out, although I will say I haven’t tried substituting at all myself and would actually recommend just finding coconut flour recipes if you prefer it. Do you recommend any other chocolate chips that are paleo? Enjoy life chocolate chips are made with cane sugar which is not paleo friendly.

Hi Dacia, thanks for reading! Enjoy Life semi-sweet chocolate chips are the closest chocolate chips to paleo that I know of. Some people say that dark chocolate is paleo compliant as long as it’s above 50%, and the semi-sweet chips are 52-55%. You could make the cookies without the chocolate chips, or you can make your own chocolate chips. (A quick Google search of paleo chocolate chips will bring up some recipes.) I hope that helps!
