For the bananas, the browner the better when it comes to baking! As bananas become more ripe, they become more sweet.
I personally like to let a bunch of bananas get really brown, then throw them in the freezer. That way I have them on hand when I need them for baking or smoothies.
If you have frozen bananas, just let them sit out and thaw or give them a quick zap in the microwave so that you can mash them and mix them into your baking.

Sweetened with bananas and prepped in 5 minutes, these paleo muffins are perfect for healthy snacking, and kids will love them. They are gluten-free, dairy-free, paleo, and refined sugar-free.
- 1/4 cup almond flour
- 1/4 cup cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp pink Himalayan salt
- 2 very ripe bananas, mashed (about 1 cup)
- 3 eggs, whisked
- 1/4 cup coconut oil, melted
- 1/3 cup dairy-free chocolate chips
Preheat oven to 375 degrees F.
Add all ingredients to a large bowl and mix well.
Pour batter into a greased muffin pan or into muffin liners (it should make 10-12 muffins).
Bake for 20 minutes, then enjoy!
