This paleo blueberry muffin in a mug makes a great quick breakfast or snack with lots of protein and fiber!

I really enjoy having a predictable morning routine that involves eating the same breakfast, drinking the same tea, and sitting in the same spot for reading and journaling each morning. But some mornings I do feel like changing things up! This paleo blueberry muffin in a mug is the perfect quick and healthy treat to change up breakfast now and then. Or, it makes a yummy snack or dessert that also helps to keep you full, since it has a lot of protein in it.

Paleo Blueberry Muffin in a Mug

My recipe for this paleo blueberry muffin in a mug is extremely easy to put together. It has all paleo, dairy-free and gluten-free ingredients, and it is sweetened with just one teaspoon of honey. The blueberries add sweetness and tartness as well.

13 grams of protein & 6 grams of fiber!

Almond flour and flaxseed meal are both excellent sources of protein and fiber. Flaxseed meal is slightly nutty tasting and is also full of omega-3 essential fatty acids as well as antioxidants. It’s inexpensive and you can buy it on Amazon and in many grocery stores. You can use it in baking, and you can also add it to oatmeal, smoothies, and fruit!

One final note:

I would recommend using a taller microwave safe mug if you have one, because as the muffin expands in the microwave it tends to pop out the top. But even with an average sized mug, I haven’t had issues with it spilling over, I’ve just had blueberry juice run down the sides.

Ingredients
Wet:
  • 1/4 tsp raw apple cider vinegar
  • 1 tbsp coconut oil, melted
  • 1 tbsp honey
  • 2 tbsp almond milk, or milk of choice
  • 1 egg
  • 1/4 cup frozen strawberries
Dry:
  • 1/8 tsp baking soda
  • 2 tbsp flaxseed meal
  • 2 tbsp almond flour
  • 1 1/2 tsp cinnamon
  • 1/8 tsp pink Himalayan salt
Instructions
  1. Add all wet ingredients except blueberries to a tall microwave safe mug and whisk with a fork.

  2. Add dry ingredients and stir with a fork, but do not over-mix.

  3. Add frozen blueberries on top and just submerge in the batter. (This keeps them from all sinking to the bottom quite as much.)

  4. Microwave for 1 minute 30 seconds, or 15-20 seconds longer depending on your microwave. Enjoy!

Can you just use more almond flour instead of flaxseed meal? I’m allergic to flax.

The consistency of this recipe gave a loose mouthfeel, kind of like flax porridge or something; it didn’t have any bite to it. The flavor was great, and I really liked the heartiness of adding flax to the mix. Maybe more flour would help with the density?

Hi Ash! I wonder if it would solidify more if you microwaved it longer. Since every microwave is different, the time will vary. For me, it solidifies nicely 🙂 But if you play with the flour amount and find something that works for you, I’d love to hear about it!

This is an awesome muffin! I microwaved it in a 2c Pyrex round glass dish and it turned out great! Reminds me of a cake. This has a flavour of a bran muffin without the bran. Nice job! And yes, you have to cook it thoroughly until it’s set. I used maple syrup instead of honey as we do our own syrup. I add coconut kefir and fruit on top. I take the wet and dry ingredients separately in containers to work and on my morning break I have a filling snack in less than 2 minutes. Thank you for this recipe it’s a keeper and I’ve shared it with a few people. ❤️
