This creamy pumpkin chia pudding tastes like pumpkin pie, but it’s extremely healthy, and would make a delicious breakfast, snack, or dessert.

Chia pudding in its most basic form is made with some type of milk with chia seeds. Chia seeds expand in liquid and remind me slightly of tapioca, if you’ve had tapioca pudding before. However, chia seeds are set apart because they are absolutely packed with health benefits!

What are chia seeds?

Chia seeds are small black seeds that come from a plant related to mint. Chia was originally grown in Mexico, and was eaten by Aztec warriors to give them energy and endurance! Chia seeds are considered to be a superfood, because they’re rich in protein, fiber, antioxidants, minerals, and essential Omega-3 fatty acids.

In addition to their nutritional benefits, chia seeds are said to have these health benefits:
  • Amazing for healthy skin, repairing skin damage, and preventing premature aging of the skin
  • Excellent for digestion, with one serving containing the daily recommended amount of fiber
  • Reverses inflammation
  • Regulates blood pressure
  • Lowers bad cholesterol
  • Boosts metabolism and energy

How to Eat Chia Seeds

Chia pudding is just one of several delicious ways to eat chia seeds. You can add chia seeds to baked goods, oatmeal, smoothies, yogurts, desserts, and homemade bars, like my Paleo Salted Chocolate Coconut Cashew Bars!

Pumpkin Chia Seed Pudding

This creamy and delicious pumpkin chia seed pudding is extremely simple to make! It is entirely gluten-free and grain-free, Whole30 and paleo compliant, dairy-free, vegan, soy-free, nut-free, and sugar-free. It’s only sweetened with dates.

All you need to make this Pumpkin Chia Pudding is the following ingredients:
  • Canned coconut milk, or another type of milk
  • Pumpkin puree
  • Pumpkin pie spice
  • Pink Himalayan salt, or sea salt
  • Vanilla extract
  • Dates
  • Chia seeds

Topping Ideas

This pumpkin chia pudding recipe tastes like creamy pumpkin pie - but it's vegan, Whole30, paleo, and only sweetened with dates! This paleo pumpkin chia seed pudding is extremely simple to make. It's healthy enough for breakfast or a snack, but tasty enough for dessert.

Ingredients
  • 1 can full fat coconut milk
  • 1/2 tsp pumpkin pie spice
  • 1/8 tsp pink Himalayan salt, or other salt
  • 1 tsp vanilla extract
  • 4 dates, soaked in hot water 15 minutes
  • 3/4 cup pumpkin puree
  • 1/2 cup chia seeds
Instructions
  1. Put all ingredients except chia seeds in a blender or food processor and blend until smooth.

  2. Add chia seeds and pulse or stir until mixed in.

  3. Pour the pudding into jars or bowls, cover, and refrigerate for at least 1 hour, or overnight.

Recipe Notes

Instead of canned coconut milk, you could use 2 cups of any other kind of milk.
