I’m always on the lookout for healthy meals that can be thrown together in 10 minutes or less. This paleo pesto chicken is one of the quickest healthy meals you can find!
Some nights I don’t have more than 10 minutes for cooking, and other nights I just don’t feel like it. It’s not so difficult to throw quick meals together, but finding meals that are filling, healthy, and quick are harder to come by!
I recently came across Paleo Running Momma’s Paleo Pesto Baked Chicken recipe and thought it looked absolutely delicious! If you want to make your own pesto, check out her recipe. If you’re good with using store-bought pesto to save time, read on.
I adapted her recipe to make it quicker to make, and added fresh spinach. This pesto baked chicken only takes 4 ingredients and 5 minutes or less to put together! Then all you have to do is throw it in the oven for 30 minutes and it’s ready to eat.
If you are eating paleo or doing a Whole30, I recommend Seggiano brand pesto, which is available on Amazon and in many health food stores including Whole Foods. It is free of cheese and sugar, and it is not made with canola or soybean oils.
This paleo pesto chicken bake is also gluten-free, dairy-free, and low-carb.
To make the paleo pesto chicken, you begin by laying the chicken breasts in a greased baking pan. You generously season the chicken with salt and pepper, then layer on the spinach. Spread the pesto over the top next, and sprinkle with Italian seasoning.
Next, you simply bake the chicken for 25-30 minutes, and it’s ready to eat! We ate ours with steamed broccoli. It would be great with roasted veggies, cauliflower rice, or quinoa if you’re not eating paleo!

This Paleo Pesto Chicken Bake only takes 4 ingredients and 5 minutes or less to put together!
- 3 lbs chicken breasts
- 12 oz pesto
- 2 cups raw spinach
- Italian seasoning, generous sprinkling
- coarsely ground sea salt and pepper, to taste
- olive oil, for greasing the pan
Preheat the oven to 400 F. Grease 9x12in baking pan with olive oil.
Place the chicken breasts in the bottom of the pan, and thoroughly season them with sea salt and pepper.
Spread a layer of spinach over the chicken breasts.
Liberally spread all of the pesto over the spinach and chicken.
Generously sprinkle Italian seasoning over the pesto-covered chicken.
Bake in the oven for 25-30 minutes, or until cooked through.
Make sure your pesto is Whole30 or paleo compliant if you are adhering. Check that your pesto is free of cheese and sugar, and is not made with soybean or canola oils.
