I don’t know about you, but when I get hungry in the afternoon I’m usually not down to spend more than 5 minutes getting myself a snack. I often reach for an apple and nut butter, but sometimes that gets old.
So I’ve been experimenting with smoothies that have very few ingredients, and this paleo blueberry coconut smoothie is my new go-to!
It’s delicious with no added sugar, and it’s dairy-free, paleo, and vegan.
This paleo blueberry coconut smoothie is the perfect quick snack! It’s full of antioxidants and vitamins, plus healthy fats from the coconut. And it’s extremely easy and quick to make, because it only has three ingredients!

How to Make It
If you want to make this smoothie the easiest way possible (like I do most of the time), all you need to do is throw some frozen blueberries, almond milk, and finely shredded coconut in a blender.
I recommend using finely shredded unsweetened coconut, but if you have a really high powered blender I think regular unsweetened shredded coconut would be fine, too. You just want it to be drinkable, unless you’re ok with eating it with a spoon.
I got my finely shredded coconut at Trader Joe’s, but you can also find organic, unsweetened, finely shredded coconut on Amazon (pictured above).
Alter It to Your Heart’s Content
Here are a few ideas of how you can mix it up if you want to:
- Add 1/2 cup of yogurt (non-dairy if you want it to be paleo) to make it thicker
- Use fresh berries, and add ice cubes
- Throw in a banana or other kinds of berries
- Add some lemon juice for extra zing
- Use coconut milk instead of almond milk to make it creamier
- Add some raw honey to make it sweeter
This paleo blueberry coconut smoothie is super easy to make, and full of flavor! It's dairy-free and has no added sugar.
- 1 cup blueberries, frozen
- 1 cup almond milk, or other non-dairy milk
- 1/4 cup unsweetened coconut, finely shredded
- 1/2 cup non-dairy yogurt, optional
Add all ingredients to blender, and pulse until it's the consistency you want. Pour in a glass and enjoy!
The blueberries and coconut make it naturally a little sweet, but feel free to add some raw honey if you'd like it sweeter. The yogurt will make it thicker, but it's delicious without it, as well. Feel free to add ice if you're not using frozen blueberries.
