Pumpkin Chia Pudding (Paleo, Whole30 & Vegan)

This pumpkin chia pudding recipe tastes like creamy pumpkin pie - but it's vegan, Whole30, paleo, and only sweetened with dates! This paleo pumpkin chia seed pudding is extremely simple to make. It's healthy enough for breakfast or a snack, but tasty enough for dessert.

Ingredients

  • 1 can full fat coconut milk
  • 1/2 tsp pumpkin pie spice
  • 1/8 tsp pink Himalayan salt, or other salt
  • 1 tsp vanilla extract
  • 4 dates, soaked in hot water 15 minutes
  • 3/4 cup pumpkin puree
  • 1/2 cup chia seeds

Instructions

  1. Put all ingredients except chia seeds in a blender or food processor and blend until smooth.

  2. Add chia seeds and pulse or stir until mixed in.

  3. Pour the pudding into jars or bowls, cover, and refrigerate for at least 1 hour, or overnight.

Recipe Notes

Instead of canned coconut milk, you could use 2 cups of any other kind of milk.
