This Paleo Pesto Chicken Bake only takes 4 ingredients and 5 minutes or less to put together!

Ingredients

  • 3 lbs chicken breasts
  • 12 oz pesto
  • 2 cups raw spinach
  • Italian seasoning, generous sprinkling
  • coarsely ground sea salt and pepper, to taste
  • olive oil, for greasing the pan

Instructions

  1. Preheat the oven to 400 F. Grease 9x12in baking pan with olive oil.

  2. Place the chicken breasts in the bottom of the pan, and thoroughly season them with sea salt and pepper.

  3. Spread a layer of spinach over the chicken breasts.

  4. Liberally spread all of the pesto over the spinach and chicken.

  5. Generously sprinkle Italian seasoning over the pesto-covered chicken.

  6. Bake in the oven for 25-30 minutes, or until cooked through.

Recipe Notes

Make sure your pesto is Whole30 or paleo compliant if you are adhering. Check that your pesto is free of cheese and sugar, and is not made with soybean or canola oils.
