Paleo Blueberry Muffin in a Mug

This paleo blueberry muffin in a mug makes a great quick breakfast or snack with lots of protein and fiber! It is gluten-free, grain-free, dairy-free, and paleo, and it is sweetened with honey.

Ingredients

Wet:

  • 1/4 tsp raw apple cider vinegar
  • 1 tbsp coconut oil, melted
  • 1 tbsp honey
  • 2 tbsp almond milk, or milk of choice
  • 1 egg
  • 1/4 cup frozen strawberries

Dry:

  • 1/8 tsp baking soda
  • 2 tbsp flaxseed meal
  • 2 tbsp almond flour
  • 1 1/2 tsp cinnamon
  • 1/8 tsp pink Himalayan salt

Instructions

  1. Add all wet ingredients except blueberries to a tall microwave safe mug and whisk with a fork.

  2. Add dry ingredients and stir with a fork, but do not over-mix.

  3. Add frozen blueberries on top and just submerge in the batter. (This keeps them from all sinking to the bottom quite as much.)

  4. Microwave for 1 minute 30 seconds, or 15-20 seconds longer depending on your microwave. Enjoy!
