This paleo blueberry muffin in a mug makes a great quick breakfast or snack with lots of protein and fiber! It is gluten-free, grain-free, dairy-free, and paleo, and it is sweetened with honey.
Add all wet ingredients except blueberries to a tall microwave safe mug and whisk with a fork.
Add dry ingredients and stir with a fork, but do not over-mix.
Add frozen blueberries on top and just submerge in the batter. (This keeps them from all sinking to the bottom quite as much.)
Microwave for 1 minute 30 seconds, or 15-20 seconds longer depending on your microwave. Enjoy!
